Superfast Saucy Bean Curd Recipe

|Description||Quick, easy, delicious chinese bean curd dish|
|Time to prepare||10 mins (less if you are handy with a knife)|
2 tsp cornflour
scant 1/2 c water
2 tbsp light soy sauce
1 tbs sesame oil
1/2 tsp each salt & sugar
1 tbs oil
3 cloves garlic, chopped fine
1 tsp ginger, chopped fine
1 fresh red chilli, chopped fine
3 spring onions, sliced fine including green parts
2 tbsp fresh coriander, chopped
500g tofu, any kind (i like soft)
|Instructions||Gradually mix water into cornflour. Add remaining sauce ingredients, mix well.
Heat oil in wok over medium heat, add chilli, garlic & ginger. Stir fry 10 secs. Add spring onions, stir fry 10 secs. Add bean curd, stir fry 1 minute. Lower heat. Stir sauce and pour over, add coriander. Mix gently and simmer until sauce thickens, stirring occasionally.
Try stirring in some steamed broccoli or add some leafy asian greens (i like kang kong) with the tofu, adding a tbs water and covering to steam for a few minutes, then proceed with recipe.
